Cheeseburger Chowder

Cheeseburger Chowder

Ingredients:

1 pound ground beef
3/4 cup chopped onion
3 tablespoons butter divided
2 cloves garlic, minced
1 cup diced carrots
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups chicken broth
4 cups diced peeled potatoes
1/4 cup flour
1 1/2 cups evaporated milk
2 cups cubed process Velveeta
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup sour cream

Directions:

In a saute pan brown the ground beef and onion.
Add garlic, carrots, basil and parsley. Saute about 3 minutes.
Add broth and beef and potatoes. Bring to a boil. Reduce heat and cover, simmer for 15 to 20 minutes or until carrots and potatoes are tender.
Meanwhile melt remaining butter in a small skillet. Add flour and cook, stirring, for 3 to 5 minutes. Gradually add evaporated milk, stirring constantly, cooking and stirring for 6 to 8 minutes. Gradually stir the sauce into the soup. Bring to a boil and cook for 2 minutes. Reduce heat to low. Add cheese, salt and pepper. Continue to stir until cheese melts. Remove from heat and blend in sour cream. Serves 8

Hi Bo...I finally got my computer back!!! That chowder sounds so good. My neighbor is having a soup party after all the kids are done trick-or-treating tonight. Maybe I can bring that recipe next year! (salted or unsalted butter - I don't cook a lot you know! :O} I had not heard a/b the soup exchange. That bowling game is addictive! I never got above 100 I just saw your age...you are brave! I won't even post mine..although I suppose I shouldn't be ashamed. It makes me sad everytime I read your "road ahead quote!" Hey Bo - Thought I'd let you know that I made your easy fruit cobbler with blueberries Saturday night and DH LOVED it - he's eaten almost all it - had it last night after suppr and 2 bowls for breakfast this morning!! I'm sure it will be gone before the day is over!
It was very simple just like you said - that one is a keeper for sure. I'll have to try other fruit, but blueberry is one of his favs.

Bo, we arrived home last night and I went to bed early. This was the first long trip since surgery. We had a great time and our gators beat GA. big time.

Thank you for your faithful visits. I have some major catching up to do.

Your chowder sounds so good and perfect for the cold weather. I enjoy this kind of cooking in the fall and winter. I love baking too. I don't bake like I used to. I'll be needing a can of Nikki's fix a fat. LOl.
